How To: Use Salt in the Kitchen

Salt is mainly used as a flavour enhancer like sugar (this is why salty-sweet combos are so tasty, it’s all flavour enhancer), but it is also a mineral/chemical (sodium) which does some fancy shit when you’re not looking. So it’s handy to know when to use it, and how.

How To: Line a Round Cake Tin

Different recipes will give different instructions on how to line your round cake tin. I use this one for pretty much every cake I make and it is (thus far) foolproof. Using baking paper I cut a circle the size of the bottom of the tin, or slightly larger. And that’s it. Put it in. No butter or oil or flour required.

Minh Phat Supermarket – Queen Victoria Market

I hate to get all “Melbourne’s Best-Kept Secrets” on you, but Minh Phat really is one of those things. It is so unobtrusive from the outside, sitting as it does opposite Vic Market on Therry Street, wedged between little clothing shops. But inside is one of the nicest, biggest pan-Asian supermarkets I’ve ever been in. I especially like to buy tofu there as it is better and cheaper than what you can get in Coleworths, and also cheaper than what is sold at the tofu store in the deli part of the Market (apparently called Tofu Trek…).

B is for Budget Blues

I am on a budget almost always, as I have chosen to work part-time. But I am on a serious budget these days to save up for a new laptop (my current one can’t run google chrome because it’s too old… eventually I figure I’ll find it sitting at bus stops waiting for death).

This is why, ok, my recipes are not Very Fancy. But also, I kind of hate fancy food at home. I think truffle oil is mostly a wank (but truffles are not) and I think replacing effort with $150 worth of groceries at a dinner party is a lame move. Learn to cook instead!

Do Somethin’*

I like cooking and eating and I want to have something to show for the choice I’ve made to work part-time this year, rather than doing my current office job fulltime.

I cook a lot of vegetarian meals. I’m pleased when a meal turns out to be vegan. When I do cook meat, I want it to be excellent. I’m on a budget but most of my money is spent on food. Good cheese and wine are vital. I don’t really enjoy photography (you can tell). I like to bake cakes but often don’t want to eat them.

Footscray is my happy place. The best restaurant dish I’ve had thus far in Melbourne was the slow-cooked octopus at Cumulus Inc. I was disappointed by Garagistes (Hobart), but maybe it was just over-hyped by idiots.**

*Title inspired by Britney Spears, naturally.
** Except the bread, the bread was stupidly good.
