Yes, I am really giving you a recipe for honey joys. A recipe which you can find on the back of the box of the main ingredient required to make them. Really. But not so much because I think you need the recipe, but because perhaps you forgot that honey joys exist?
When I made these they smelt like my childhood, and I look forward to making these with my nephew and niece sometime (Hi Max and Amber, promise to see you guys sooooon!). Easy, cheap, and pretty yum.
Makes 30, requires patty pans.
Preheat oven to 150°C
5 cups of cornflakes
100 grams butter
1/3 cup white sugar
2 tablespoons honey
Melt the butter with the sugar and honey in a saucepan, stir well to try and dissolve as much of the sugar as possible, without allowing the mix to burn. Pour this over the cornflakes in a big bowl, and mix well so that everything is coated with the liquid.
Put large spoonfulls of the cornflakes into your patty pans (is there a less naff name for those things?) and put on a baking tray (or two). Bake in 150°C oven for 10 minutes. Allow them to cool. Share.
